In 2015, one of our founders was on a winery tour when he came across something curious and rare — a fabled bottle of Napa Valley Chardonnay with a five-figure price tag.
His inner wine enthusiast asked: “Wine that’s too valuable to open and enjoy…what’s the point?” His inner scientist answered: “Nothing. So let’s re-create it ourselves.”
With that, two scientists (Mardonn and Alec) and a sommelier set out on a years-long quest to reimagine how spirits are made — by mapping out the flavors and aromas, finding them in nature and combining them note by note.
The results speak for themselves: All of the flavor. All of the quality. None of the old wasteful, inefficient production methods. All to make fine spirits more attainable. When it comes to creating beverages in better, more responsible ways, the possibilities are endless.
